Lovely Colour

Another glut of vegetables to be dealt with, this time it is beetroot one of my favourite vegetables.

I have blitzed one of the lager beets with a tin of chickpeas, some lemon juice, garlic, olive oil, salt, pepper, chilli flakes(of course) and a little bit of ground cumin.

This was the result, doesn’t it look lovely. ¬†Tonight’s dinner sorted.
