Avocado Tortilla Soup
This is my first attempt at making soup in my new Vitamix. The recipe suggested adding sweetcorn to the mix with tortilla crisps at the end to give the soup texture. I really don’t like sweetcorn and tortilla crisps just felt wrong so I added extra black beans the other half of the avocado and spring onions. I also added a little bit of hot pepper sauce because I like it in soup. It couldn’t be easier and it was very tasty.

Avocado Soup


  • 2 cups of chicken stock
  • 5 large tomatoes
  • small bunch of coriander
  • 1 peeled garlic clove
  • 1/2 avocado, pitted and peeled
  • 1/2 lime, peeled
  • 1/2 tsp hot pepper sauce
  • 1 cup of black beans
  • 1/2 avocado
  • 2 spring onions.


  1. Put the first 7 ingredients, in the order stated, into the jug of the Vitamix. Use boiling water to speed up the process but it isn’t essential.
  2. Select variable speed 1.
  3. Turn on the machine and quickly increase the speed to 10 then flick to high.
  4. Blend for 6-7 minutes or till you see heavy steam escaping from the lid.
  5. Reduce the speed to Variable 2 and remove the lid plug.
  6. Drop in the black beans, 1/2 an avocado and the spring onions.
  7. Blend for an additional 10 seconds.
