Tomato and Red Pepper Soup

Tomato & Red Pepper Soup I have been making this soup for years, I really like it and often have it in a cup rather than a bowl. Maybe I should call it Tomato and Red Pepper Cup a Soup? I guarantee it is better than any cup a soup you buy in a packet. I’m going to extol the virtues of Lidl’s roasted red peppers again, making this soup would be a faff if you had to roast and skin peppers, it would also be more expensive. I usually blitz this soup with my Bamix stick blender but this time I tipped it into my Vitamix to get it really really smooth. It did a brilliant job ( I might stop going on about the Vitamix soon, but I might not, we’ll see).

Tomato & Red Pepper Soup

Ingredients

  • 2 medium onions roughly chopped
  • 1 clove of garlic roughly chopped
  • 2 chopped red peppers from a jar but roast your own if you must.
  • 1 chilli or crushed chilli flakes (optional)
  • 2 tins chopped tomatoes
  • olive oil
  • boiling water or stock

Method

  1. Fry the onion and garlic in a little oil till it starts to soften.
  2. Add the peppers and the chilli, cook for a few minutes.
  3. Add the tomatoes and cook till the liquid has reduced by half.
  4. Fill both of the tomato cans with boiling water or stock and add to the pan.
  5. Cook for about 30 minutes then blitz really well, get it as smooth as you can.
