Spicy Butternut Squash Soup

Butternut Squash Soup I am attempting to use up bits and pieces in my cupboards, fridge and freezer this month for two reasons, I don’t like waste and I can’t be bothered going to the supermarket. As it is cold today I combined a butternut squash that needed to be used with half a tin of coconut milk that has been languishing in the freezer for ages, an onion (I’ve always got onions) and some spices to make this soup. I cooked it on the hob then blitzed it in my Vitamix. It was delicious. Nigella would probably use the work unctuous but I would say it was velvety smooth. I’m not a huge fan of coconut milk because I don’t really like creamy tastes but this was ok, maybe because I only used half a can. I finished off the soup with some coriander and lime juice. I also had a fresh sourdough loaf to mop up all the last bits in the bowl. This is what I did.

Spicy Butternut Squash Soup

Ingredients

  • A butternut squash
  • 1 onion chopped
  • Vegetable Stock ( I use Marigold Boullion)
  • 1 chilli
  • 1tsp freshly grated ginger
  • 2 cloves of crushed garlic
  • 1 lime
  • chopped coriander

Method

  1. Peel the squash and cut it into chunks then roast in a hot oven 200C Gas 6 for about 20 mins till soft and starting to brown.
  2. Meanwhile gently saute the onion till soft.
  3. Add the garlic, ginger and chilli and continue to cook for a couple of minutes.
  4. Add the roasted squash.
  5. Add enough stock to just cover the vegetables. Don’t add too much or your soup will be watery when you add the coconut milk. You can always add more stock if you need to later.
  6. Cook for 10-15 mins till the squash is really soft.
  7. Blend till it is really smooth then add the lime juice.
  8. Serve garnished with coriander.
