Pulled Pork with Slaw and Barbecue Sauce

Last week Jen went to a class at the Bertinet Kitchen, her competition prize. Her tutor for the day was Emma Grazette who co wrote a book with Stevie Parle called Spice Trip. Different countries were visited focusing on different spices and their trip was the subject of a channel 4 television series. While she was visiting this weekend Jen recreated the dishes she learned and we added a few of our own. The theme was spice and the dishes were from different countries. The star of the table was her Pulled Pork with Barbecue Sauce and Zingy Salad, the recipe can be found here We added spicy cashew nuts, tomato salsa and labneh. Labneh with Dukka seems to go with lots of my meals, if you haven’t tried it you should it is gorgeous. We also added some flatbreads the link is for a Nigel Slater recipe which he based on Paul Hollywood’s or it can be found in Paul Hollywood’s book How to Bake. Everything was delicious and very very filling. Dessert was an Orange Polenta Cake with Clove and Orange Caramel Sauce I have to say I didn’t like it but I’m not a huge fan of desserts and cakes, luckily everybody else liked it.  I will be making this dish myself, because it was delicious and because it was very easy, the pork was put in the oven and left there for 5 hours! I loved the salad and finished it off today for lunch.

    It’s my new favourite thing and works equally well as a sandwich as we finished it off for tea.
