The Vitamix Meets It’s Match

Passion Fruit CurdAfter my success making lemon curd in the Vitamix I decided to try passion fruit curd. I debated with myself about sieving the fruit to get rid of the seeds but I have blitzed raspberries to absolute smoothness so I decided passion fruit seeds wouldn’t be a problem. As you can see by  the picture I was wrong! Not a problem I thought I will just sieve it before I put it into the jars but that didn’t work either the black seeds went straight through, so I give you seeded passion fruit curd. It’s a bit gritty but it tastes ok. Next time I will sieve the fruits.  I made the curd with the seeds of 10 passion fruit, butter, eggs and sugar so I’m not going to waste it.

That looks just my “cup of tea” . My passionfruit curd doesn’t have any seeds in so obviously a fiddly business and it explains why it is so expensive, but i don’t mind grit!

Then you shall have a jar of gritty curd.
