Spiced Basmati Rice


  • Basmati rice measured out to the 15 fluid ounce mark on a measuring jug
  • 1 chopped onion
  • 20 fluid ounces of boiling water
  • 1/2 tsp mustard seeds
  • 1/2 tsp cumin seeds
  • 1 tsp ginger garlic paste
  • 1 chilli


  1. Wash the rice in many changes of water till the water runs clear.
  2. Leave the rice to soak covered with water for at least 30 minutes.
  3. Drain the rice.
  4. Heat some oil then add the mustard seeds, cumin seeds and chilli.
  5. After a few seconds add the ginger and garlic paste and cook for about 30 seconds.
  6. Add the rice and stir to coat with oil.
  7. Slowly add the boiling water and some salt, bring back to the boil and cover with a tight fitting lid.
  8. Cook for 10 minutes over a low heat, don’t lift the lid before this time.
  9. After 10 minutes have a peek and pull back the rice with a fork. If there is still a lot of water in the pan put the lid back on and give it a bit longer.
  10. When there is no water left put a tea towel over the pan under the lid and leave to steam. It will keep warm for quite a long time. The steaming will make if fluffy and non stodgy.
