IMG_1649I know Gazpacho isn’t something everybody likes, Brian doesn’t, but I love it and I wish I had thought about making it during our recent spell of hot weather.   I am often put off making it because of all the chopping but while I was flicking through a Vitamix article it dawned on me that with the Vitamix it would be super easy and so it proved to be.  Cold soup seems very wrong to some people but it really is very refreshing and tasty not to mention stuffed full of vegetables so if you are trying to get your 5 a day ( or 10 a day if you are American) this is a good place to start.  I didn’t blend the soup to a pulp, I left it quite chunky.  Obviously you can add other vegetables if you want, celery maybe?  Garlic would also be nice unless you are the only one eating it!

Super quick, super easy and super tasty.
Serves: 3-4
  • 2 tomatoes
  • ½ cucumber
  • 4 spring onions
  • 1 long pointy red pepper or ½ standard one
  • 3 cups tomato juice
  • ⅓ cup red wine vinegar or sherry vinegar
  • As much tabasco as you can take
  • A dash of Worscestershire Sauce
  • salt and pepper
  1. Put everything in the Vitamix and pulse blend on slowish speed till it is as chunky or smooth as you want.
  2. Serve garnished with chopped spring onions and a drizzle of olive oil.
  3. No Vitamix? Just chop vegetables by hand and add to the wet ingredients.
  4. The original recipe suggests adding ¼ cup olive oil but I left that out.

      A food processor would work, does it have that attachment?

    Has a processor , will give it a go one day . Not got ingredients for now x
