Thai soup

Thai SoupI made this soup a few days ago but when I tried to upload the post it wouldn’t go so I’m trying again because it was good and I want the recipe for future reference.   The recipe is an adaption from the Vitamix website and as with most recipes many more adaptations are possible.  The recipe says to put coriander in with all the other ingredients but I have found that when coriander gets blended it turns the mixture a sludgy khaki  colour so I add it at the end with a courgette and some cashew nuts to give a little texture.  I would also have added some lemongrass if there had been any in the fridge.

Quick and tasty.
Ingredients
  • 500ml stock
  • 1 large carrot
  • 1/2 stalk celery
  • 1/4 yellow or red pepper
  • 2 spring onions
  • 1 slice cabbage
  • 1/4 of an apple
  • small piece of garlic (not too much)
  • 1/2 – 1 chilli
  • 1 1/2 cm fresh ginger
  • 2 handfuls unsalted cashew nuts
  • 1 cm slice of lemon with the skin
  • coriander and courgette added at the end
Instructions
  1. Put everything except the coriander and courgette into the blender.
  2. Blend on high speed for 7-8 minutes till steam escape from the lid.
  3. Drop the coriander and courgette into the blender on variable speed 1 for a few seconds till it is the consistency you like.

    An apple seems like an odd ingredient to put in Thai food

      Thai food usually has a sweet element. I thought the cabbage was a bit strange! I usually follow a recipe as written the first time I do it then I improvise.

    Have you to cook it all before blending??

      No it cooks in the Vitamix with friction. I love my Vitamix, watch a you tube video here
